Sincere efforts are being made by the companies making cookwares to come out with something unique that saves on both energy as well as oil or fat. A series of gadgets and appliances have been introduced in the market. However, efforts are not either sincere on the part of these companies or these companies are just concerned to earn more profits selling limited number of items rather producing more items and selling at low prices. Several promising products like hot air oven, microwave, super heated steam oven and recently air fryers have been introduced in the market but prices of these products limit their use by the common men.Air fryers are priced so high and use of these air fryers is so limited that one may not see much success of these gadgets in near future.Although air fryers are just convection type ovens but they have hidden fans that rotate hot air. Air fryers reduce cooking time to just half and crispy chips are made using just 1/4th of oil quantity used by ordinary ovens. However, these air fryers are priced between $ 200-350. review of recently introduced Philips Air Fryer shows that these take less time for cooking, consume less oil for frying, and chips are more crispy than ordinary convection type ovens. However, these have limitations for cooking variety of dishes due to shortage of accessories as evident from the discussions in several forums.

Super heated steam oven

These High Tech Ovens employing super heated steam for cooking have several benefits over the Ovens using convection heat. It is really worth spending few hundred more dollars than purchasing ordinary ovens and then repenting for wasting money without considering cost and benefits of the purchase.

  • The moisture content and vitamins such as vitamin C are retained due to the low oxidization that occurs using the cooking with super heated steam ovens.
  • It can also dry bake items such as bread and cookies and can even toast bread
  • All the nutritious value of the food is retained and fat and excess salts are removed. The cooked food has low calorie values
  • Cooking is more efficient because of high latent heat with superheated steam.
  • It additionally acts as a reheating device that keeps the flavours in original state. The combination of heat and humidity ensures that the food is closer to original quality.

Super heated steam is non-toxic and has high heat transfer capabilities. It is possible to obtain superheated steam under normal pressure and produces condensation heat on coming into contact with the food. It follows closely the laws of a perfect gas, and has a high latent heat of vaporization and specific heat about twice that of the air. The specific heat of steam is relatively high, so it can carry more thermal energy at practical temperatures than other usable gases. With its high heat transfer capabilities, it is applied to the food preparation methods like roasting.

Cooking with steam:

Steam is the heart of superheated steam ovens. Steam generating unit converts water into steam at 100 oC. Once the water reaches its boiling point sensor generating steam, a state of the art process superheats the water to 288 oC, while the exterior of the oven stays cool to the touch. The water reservoir and the water gauge add convenience to the cooking process. Preprogrammed settings (“stand by:, “system on”; “auto cook”; “manual cook”) provide the correct time, temperature and optimal combination of heat, steam and super heated steam for cooking the healthy and nutritious food. Super heated steam is sprayed onto the food from three directions – two sides and the top of the compartment. The ovens are equipped with buzzer alarm and LCD screen for display.
